Healthy Baking Recipes: Rich Vanilla Tender Coconut Cake:

We are back with another delicious recipe right from the kitchen of our friends at Baking Bonheur! We received great feedback from you for The Classic Chocolate Cake healthy recipe and we're glad that so many of you tried baking during the lockdown😍 

Now it is time for a healthy recipe for Rich Vanilla Tender Coconut Cake!

Ingredients for the Sponge:

Coconut Flour – ¾ Cup

Baking Powder – 1 teaspoon

Baking Soda – ¾ teaspoon

Pinch Salt

Vanilla Extract – 1 tablespoon

Honey/Date Syrup – 1/3 Cup

 Note: Use honey to maintain a creamy white color

Coconut Milk – 1/3 Cup

Coconut Oil – ¼ Cup

4 Eggs + 2 Egg Whites

Ingredients for Fresh Cream Frosting:

Dairy-Free Whipped Cream – 1 Cup

Freshly Grated Coconut – ½ Cup

Coconut Milk – 3 tablespoons

Method:

Mix the coconut flour, baking powder, baking soda, and salt, and sift and keep aside.

Mix the vanilla extract, honey/date syrup, coconut milk, coconut oil, and eggs, whisk/beat till smooth and keep aside.

Pre-heating: Pressure Cooker - Remove the whistle and heat for 10 minutes on a low flame. Remember to keep a plate up-side-down inside the pressure cooker to avoid direct contact with the mould and cooker.

Pre-heating: Oven- Heat the oven both ways at 200°C for 10 minutes.

Add the dry ingredients to the wet ingredients in 2 parts. Initially, whisk till the lumps are gone (should take about 1 minute), then use the cut-and-fold technique to make a smooth batter (should take 1-2 minutes). Do not overmix!

Bake for about 25-30 minutes (pressure cooker/oven)

Baking Setting

Pressure Cooker – Remove the whistle and bake for 25-30 minutes on a low flame

Oven – Bake for 25-30 minutes at 200-250°C with both side heating

Bonus Tip!

After about 20 minutes, check for golden edges. Once the golden edges are seen, use a toothpick to pierce the cake. Once the toothpick comes out clean, your cake is ready!

Frosting

Beat some dairy-free whipped cream for 4-5 minutes

Once it has soft peaks, add 3 tablespoons of coconut milk and freshly grated coconut.

Mix well and use for layering

Your freshly baked and supremely moist tender coconut cake is all ready!
